Pierre Huet Signature VS Calvados 700ml
For five generations, the Huet family has distilled Calvados in Normandy's Pays d'Auge, the region recognized as the highest-quality sub-appellation within Calvados production. Their estate continues traditional methods passed down through the generations, working with locally grown cider apples and time-honored equipment rather than modern shortcuts, which has helped establish the family as one of the most respected names in the category.
Production begins with pressed apple juice that ferments for a full twelve months in oak barrels roughly a century old. The resulting cider is then double distilled in a traditional copper still known as an alambic à repasse, heated using wood chips produced on the estate itself. The first pass yields a lower-proof spirit called petites eaux, and the second concentrates only the heart of the run into a Calvados around 70 percent alcohol before it rests in oak barrels for two to three years, the minimum required for the VS classification.
The nose opens with newly picked apples cooked in butter, giving way to refreshing notes of mint and honey. On the palate, the Calvados shows a round, generous character with a balance between sweetness and bitterness. The finish is layered, closing on baked apple and warm spice.
