This liqueur centers on Weichsel cherries, a sour variety grown on farms in Lower Austria prized for their vivid flavor and fine balance of sweetness and tartness. Purkhart combines juice from the seasonal harvest with an eau-de-vie distilled from the same cherries rather than a neutral spirit base, and deliberately leaves out spice or vanilla additions.
