Shibui isn't a single distillery but a curating company built around the idea of presenting the best Japanese whiskies to a global audience, with a guiding motto of "We Don't Distill, We Discover." The name itself references a Japanese aesthetic concept describing understated, subtly complex beauty, an ethos the brand applies to sourcing whisky from small distilleries across Niigata Prefecture and beyond rather than distilling its own spirit. Shibui has built its reputation on seeking out overlooked Japanese and international malt whiskies and blending or bottling them under a shared house style.
The Pure Malt 10 Year is a blended malt whisky, made entirely from malted barley whiskies sourced from distilleries in Niigata, Japan, and the lowlands of Scotland, each aged a minimum of ten years before blending. The component whiskies are distilled in double copper pot stills and matured separately in American ex-bourbon barrels and European Oloroso sherry casks, then married and given a final finishing period in rare Japanese mizunara oak. The finished whisky is bottled non-chill filtered at 43 percent ABV with natural color, and it earned the trophy for Best Asian Whisky in the World at the International Wine & Spirit Competition.
On the nose, almond, ginger, and caramel cookie notes open things up with a refined, inviting character. The palate turns creamy, bringing coffee and rich dark chocolate to the front, while the finish runs long and layered, closing on spiced oak that lingers well after the sip.
