Shibui is not a distillery itself but a curator of Japanese whisky, sourcing barrels from distilleries across Japan and bottling only what its team considers the finest examples. This particular expression comes from the Masahiro Distillery in Okinawa, a subtropical setting that sets it apart from the cooler northern regions typically associated with Japanese whisky production. The name Shibui roughly translates to an understated, timeless kind of coolness, reflecting the brand's low-key approach of discovering rather than distilling.

This single grain whisky is distilled entirely from grain using a dual distillation process in stainless steel stills, a method that produces a higher filling strength than single distillation and contributes to the whisky's notably dark color. It matures for a full fifteen years in first-fill Fino and Manzanilla sherry casks, developing in Okinawa's warm, humid climate, a maturation environment quite different from Scotland's cooler warehouses. It is bottled at 43% ABV.

The nose offers plum, Belgian chocolate, and macadamia nut alongside spiced fruit and toasted almond. On the palate, sherry sweetness meets dried fig and raisin, layered with dark chocolate and a whisper of orange peel. The finish is long and warming, closing on gentle spice and lingering nuttiness.
