St. Agrestis is a Brooklyn distillery founded by brothers Louis and Matt Catizone, who teamed up with industry veteran Steven DeAngelo to open shop in Greenpoint. Drawing on their Italian heritage, the founders set out to celebrate traditional Italian drinking culture, and the distillery went on to produce the first amaro made in New York City before turning its attention to the zero-proof category.

The Phony Negroni is a non-alcoholic, ready-to-drink riff on the classic cocktail, built from roughly thirty organic, non-GMO botanicals sourced from five continents. Rather than dealcoholizing a spirit-based product, St. Agrestis developed a proprietary production process that macerates individual botanicals, including wild Tuscan juniper, Sicilian citrus, and gentian root, then blends them to recreate the color, aroma, and mouthfeel of a proper Negroni. A touch of carbonation is added at the end to mimic the bite alcohol typically provides.

The result pours with a deep amber-red hue and delivers layered notes of piney juniper and bittersweet citrus peel, backed by a persistent, herbal bitterness that closely tracks the character of the classic drink it references. Serve chilled straight from the bottle or over ice with an orange twist.
