Tabernero Pisco Acholado Brandy 750ml
Tabernero was established in 1897 by the Taboada family in the Chincha Valley of Ica province, on Peru's sun-baked southern coast roughly two hundred kilometers from Lima. The winery weathered significant upheaval during the country's agrarian reform period before undergoing a major rebuild starting in 1979, when new vineyard land and updated equipment revitalized the operation. Its pisco is sold under the La Botija label, one of the more widely recognized names among Peru's export-focused producers.
Acholado refers to a blended style of pisco, and this bottling combines Quebranta, Peru's signature non-aromatic grape, with Italia, an aromatic variety related to Muscat. The two are rigorously selected and vinified using techniques the house describes as merging traditional pisco craft with modern winemaking technology, allowing each grape's particular strengths to complement the other in the final blend. As with all Peruvian pisco, distillation happens once, without dilution, preserving the spirit at full proof.
The nose carries a semi-aromatic character with a distinct touch of Muscat, alongside herbaceous notes and stone fruit. On the palate the assertiveness of the Italia grape meets the roundness of the Quebranta, building toward a long, peppery, and notably spicy finish.
