The brewery, the only one in a town otherwise known for centuries old pottery traditions, has built a reputation for meticulous, award-winning sake using water drawn from the Nikko mountain range and rice selected with equal care.
For Iki, Tonoike turns to Yamadanishiki, milled down to an impressive 38 percent, a level of polishing typically reserved for the brewery's most premium releases. The result is a lively, complex junmai daiginjo with a naturally light effervescence, a quality that comes through as a gentle, tingling sensation on the tongue rather than the deep fizz of a true sparkling sake.
That effervescence carries into a burst of bright citrus, ripe pear, and lychee sweetness, rounded out by a refreshing wave of umami that keeps the whole experience feeling balanced rather than sugary.
