Trimbach Kirsch Cherry Brandy 750ml
F.E. Trimbach was founded in 1626 in Riquewihr, Alsace, and the family has spent nearly four centuries and twelve generations building a reputation centered on exquisite Alsace wines, particularly its high-end dry Rieslings. Now based in Ribeauvillé, the house also applies the same rigor to a small range of fruit brandies, of which the Kirsch is a standout, carrying forward the same careful selection and traditional distilling craft the family is known for.
This Kirsch is made from cherries picked at full ripeness in Alsace, hand checked for quality and destemmed before the fruit is mashed together with the pits, a step that develops the spirit's signature bitter almond note. Fermentation is carefully controlled between 22 and 25 degrees, and the mash is then run through copper alembic stills, keeping only the heart of the distillation while the head and tail are discarded. The clear spirit rests in stainless steel for a minimum of sixteen months before bottling at 43% ABV, a process meant to preserve the pure cherry character rather than mask it.
The nose is intense and true to sun-ripened cherries, layered with a refined bitter almond note. On the palate the brandy is dry with medium acidity, full bodied and elegant, finishing long with pure, lingering cherry fruit and a whisper of baking spice.
