Weller Full Proof Bourbon Whiskey 750ml

Buffalo Trace Distillery in Frankfort, Kentucky introduced Weller Full Proof in 2019 as a new addition to its wheated bourbon lineup, which also includes Weller Special Reserve, Weller Antique 107, Weller 12 Year, and William Larue Weller. The Weller name honors William Larue Weller, credited as an early pioneer of wheated bourbon, and the family of Weller bottlings shares a mash bill similar to the one used for the highly sought-after Pappy Van Winkle line. Full Proof was released after years of requests from bar owners and retailers who wanted a non-chill filtered, higher-proof Weller option beyond the standard 90-proof 12 Year release.

Full Proof takes its name from the fact that it's bottled at exactly the proof the whiskey entered the barrel at, 114 proof, rather than being diluted down like most of the Weller range. The mash bill substitutes wheat for rye as the secondary grain, alongside corn and malted barley, giving the whiskey its characteristically soft, rounded structure even at higher strength. It carries no age statement and skips chill filtration entirely, a choice meant to preserve the natural oils that give the bourbon its fuller mouthfeel, occasionally showing as slight cloudiness when the bottle is chilled.

The nose brings caramel, vanilla bean, and toasted oak layered with dried fruit and dark cherry. On the palate, butterscotch and brown sugar lead into baking spice, cocoa, and a touch of leather, with the wheat softening what could otherwise be a hot, aggressive pour. The finish runs long and warming, closing on oak and toffee that lingers well after the sip.
