Siembra Valles is produced at Hacienda Cascahuín, NOM 1123, in El Arenal in the Valles region of Jalisco, a project by Siembra Spirits that emphasizes terroir-driven, additive-free agave spirits. The brand draws on techniques more commonly associated with mezcal production, applying that traditional, hands-on philosophy to tequila made from estate-grown Blue Weber agave. Its High Proof Tahona bottling is meant to showcase the full character of the Valles terroir at close to natural strength.
The agave here is roasted for seventy-two hours in a twelve-ton brick oven, then crushed using a volcanic stone tahona alongside a small hand-operated roller mill, a labor-intensive method that draws deeper flavor from the agave fibers. Fermentation takes place in open-air brick vats using bagasse for added texture, after which the spirit is twice distilled in a copper alambique still. Rather than proofing down with water, the tequila rests for several months in glass demijohns capped with corn cobs, a technique that allows gentle micro-oxygenation while preserving the spirit closer to its natural distillation strength of 49.5% ABV.
The nose is intensely aromatic, layering roasted agave with earthy minerality, black pepper, citrus zest, and a touch of mint. On the palate, rich agave sweetness takes the lead, evoking roasted pineapple and honey, balanced by cracked pepper, tropical fruit, and herbal spice, all carried in a viscous, oily texture. The finish runs long and warming, with a peppery heat that reflects its high proof without ever feeling harsh. Batch variation means each release offers a slightly different window into this particular corner of Jalisco.
