Takamine Whiskey honors Dr. Jokichi Takamine, a Japanese chemist who first applied koji fermentation to whiskey in Peoria, Illinois, back in 1891. His original vision was revived over a century later by Honkaku Spirits, founded by Christopher Pellegrini and Stephen Lyman, who partnered with Shinozaki Distillery in Fukuoka to bring the process back to life using the very production techniques Takamine had once pioneered on American soil.
This rare expression draws on some of the distillery's earliest experimental barrels, distilled in January 1998 from polished barley fermented with white koji and native Fukuoka yeast rather than through conventional malting. After double distillation on pot stills, the spirit enters the cask at a natural strength near 45%, then rests for 26 years inside a converted municipal rice bunker with thick concrete walls that create an unusually stable, cave-like aging environment despite Japan's warm climate. Only a small parcel of casks was selected for this bottling.
Expect mature sherry character layered with salted caramel, pomegranate molasses, and leather. The koji fermentation lends a distinct umami depth uncommon in traditional whiskey, while decades in cask have built substantial richness and complexity. This is a contemplative sipping whiskey best enjoyed slowly, neat, to fully appreciate its rare, deeply matured character.
