Fidencio Mezcal traces back over a century to Fidencio Jiménez, who settled in Santiago Matatlán, Oaxaca and began learning the craft of mezcal-making through years of trial and error alongside his peers. His son Enrique Jiménez now serves as maestro mezcalero, carrying forward four generations of family knowledge at Fabrica de Amigo del Mezcal, the palenque where all Fidencio expressions are produced using estate-grown and foraged agave.

This bottling is made from Madrecuixe, a wild agave species that grows at high elevation and takes twelve to fifteen years to mature, yielding far less usable material than cultivated espadín. The agave is foraged in the mountains near San Baltazar Guelavila, then roasted for five days in a stone-lined earthen pit fueled by black oak. Once cooked, the piñas are crushed with a traditional tahona, fermented in open-top pine vats with native yeast, and distilled twice in wood-fired copper pot stills without dilution.

The nose is vegetal, mineral, and floral, reflecting the rugged terrain where the agave grows wild. Bold smoke carries through the palate, balanced by a firm, mouth-watering acidity, while notes of leather and toffee add depth alongside a gentle caramelized sweetness. The finish runs long and dry, making this a complex sipper best enjoyed neat, or paired with grilled meats and aged cheeses.

Fidencio Jim?nez, the namesake for Fidencio Mezcal, started making mezcal over 100 years ago when he moved to Santiago Matatl?n, Oaxaca. He began to live the life of a Mezcalero, learning from peers and by trial-and-error. He worked closely with his son Enrique to perfect their craft and to pass down their knowledge to the next generation. In those days, even the equipment was from the land: clay pots for fermentation, distillation & storage and river reeds for tubing.
