VINIFICATION: The grapes are picked early to maintain freshness, and are pressed lightly to obtain a pale pink color. Fermented as white wine (80% stainless & 20% used barriques) and bottled for the second fermentation in March following the vintage. After about 16 months on the lees, the wine is disgorged and topped up with the same wine (no "liqueur".
