This is the domaine’s horse, a wine that never fails to make the cut for Bettane & Desseauve’s annual Guide des Vins, France’s most serious guide. The Guide notes the "perfect maturity" the Natters obtain from their grapes, and that maturity, coupled with native yeast fermentation in foudre, accounts for the intense aromas and rich texture of the wine. It spends a minimum of six months aging in the big casks. Production averages 8,500 cases.

In an increasingly complex and ever-changing wine world, I have a soft spot for those who just keep things steady and simple. The Bottex family is literally the only vigneron family I know who make one single wine, have always made only one single wine, have no plans to expand, and make their one single wine ridiculously, deliciously well. No changes to the label nor to what’s inside the bottle, in at least the few decades I’ve been drinking it. No need to chase any fads when you’ve got something impeccable you can be proud of. This is a universally loved pink bubbly delight of candied strawberries and roses, always true and always exquisite. Icing on the cake is that it’s affordable, too.
This is a very old school Beaujolais in the best sense: beautiful garnet color, beguiling aromatics, and a burst of refreshment in the mouth—and that burst is a savory, mineral, toothsome thing because of the domaine’s high elevations and because of Brouilly’s meager volcanic soils.
