Soils/Terroir: A 2ha parcel in ‘Les Poyeux’ of shallow sandy green soils atop a bed of clay-limestone.

Yield: 30 hl/ha
Winemaking: The grapes were hand harvested, fully de-stemmed and transferred to stainless-steel vats for fermentation. Fermentation began spontaneously using only the naturally occurring indigenous yeasts. The grapes macerated for 21 days with light pump overs and occasional punch downs. After maceration the grapes were pressed and transferred back to stainless steel vats to complete fermentation.
Maturation: Aged for 18 months in a combination of sandstone amphora (70%), and 6-year-old 225L ex Chateau Latour barrels (30%). Prior to bottling a low dose of sulfur was added.
“Lo Sang del Pais” translates as “the blood of the countryside” and one can easily feel the life-force of this wine. The grape bunches are hand harvested and after being de-stemmed they are fed into fermentation tanks using gravity flow. The “cuvaison” lasts 21 days with the juice being pumped over the cap during the first 6 days. The wine is aged for 6 months in large oak and chestnut barrels which range in age up to 200 years old. The wine has a bright violet color and aromas of wild red fruit and pepper which follow through on the palate with freshness and vibrancy.

A custom cuvée for European Cellars and a joint project between Eric Solomon and Jean-Marc Lafage, Bastide Miraflors is a cuvée created from old vine Grenache (30%) grown on the schist and granite soils of Saint-Paul de Fenouillet, a terroir that always ripens late in the year, and Syrah (70%) from gravelly soils near the Mediterranean. After a long maceration of six weeks, the wine ages for 12 months in roughly 3/4 concrete vats and 1/4 600L French oak demi-muids.
